First between September and December, Olive are harvested/ picked by hand or with sticks and rakes. Then they are collected in nets beneath trees. Leaves and stones are moved. The olives are washed to remove impurities. The olives are crushed / pressed using granite stones, within 24-36 hours of picking. The paste obtained is layered on mats and then it is put under pressure from a screw or hydraulic press. It is collected and put through a centrifugal separator.
